Pork is most common in Thailand, but higher calories. remove from heat Add FRESH lime juice from 3 limes, 1/2 tablespoon sugar, 2 tbsp fish sauce, salt, MSG, powdered chili peppers to taste. (All these really to taste but use this as a starting point) Add 2 shallots, green onions or chives, cilantro and mix into meat. Not necessary, but good: add toasted sticky rice sprinkled on top (simple - just watch a how to video on YouTube) Then make lettuce wraps with Thai sticky rice (optional), lettuce, and cucumbers. I stopped my parents house and decided to cook for my dad while we watch the NBA Finals.
Got a new Béarnaise sauce recipe and was really excited to make it with some chicken.
We season the chicken breast together (same old salt, pepper, etc.) and fry it in a pan as I’m preparing the sauce in another pot.
Chickens about to be finished when my dad said he doesn’t want the chicken to burn at the bottom of the pan so he wants to add a soy sauce base or something so that the chicken will soak it up and not burn at the bottom.
I’m totally confused as to why we need to do this. The chicken is done, we could just put it on a plate and wait 5 mins while the Béarnaise sauce is almost ready.
I ask him why does he need to add a base? I tell him I want him to try the sauce first.
He seems dead set on it and I remove my pieces of chicken and let him add his base.
At that point I’m pissed and get quiet. He can visually see me become mad. I come cook for you and am super excited to have you try a new recipe without it being messed with.
Foods all ready and I apply the Béarnaise sauce on top of my chicken and my dad asks for some. I refuse.
I said you didn’t seem interested in trying it all since you made your own sauce, so you can just add more soy sauce if you want.
He says he was worried that the Béarnaise sauce would be too bland, and that he just want to prevent that.
I refuse to give him the Béarnaise sauce, and I place it on the oven as I sit down and eat.
He can go grab it, that’s fine, but I won’t serve it to him. He knows I’m mad, he knows there’s tension in the room. He doesn’t go for the sauce and just eats his chicken as is.
No talking commences, we’re just eating and watching the game.
My feeling is why doesn’t he trust me? Why is he so controlling? He knows I’m excited to cook for him, why does he always have to alter or “fix” my cooking, shit, everything else I do.
AITA for declining to give my dad any Béarnaise sauce?

So in my country we have deli meat available but the most common type is chicken or beef mortadella which I am not a fan of. Cold cuts isn’t a common thing here so good quality slices made from actual meat is pretty expensive and hard to find. I came across an easy looking recipe for homemade deli meat using chicken breasts by doing an overnight brine with salt and brown sugar and then re season followed by baking it low and slow and most importantly letting the chicken fully cool in the fridge before slicing. This seems pretty easy to me, I was wondering if anyone here as done this sort of recipe before and has any tips for me.

Marinade #1: I Doubled all the following sizes Brown Sugar - 1cup Soy sauce - 1cup Worcestershire sauce - 3 TBPS Paprika - 1 TBPS Black pepper - 2 tsp Red pepper flakes - 2 tsp Onion powder - 2tsp Garlic powder - 1tsp Notes: - the spiciness showed up to the party, but didn’t make a splash, very mild - most of the sweetness comes through in the aftertaste - tastes like an “All American” crowd-pleaser type of jerky. It’s not trying to offend anyone - I can barely taste the garlic and paprika - the color is nice and rich Do y’all think I should have doubled up the paprika? | Long story short, I made a pepper jack following cheesemaking.com’s recipe and doubled it to 4 lbs. I also doubled the quoted weight for pressing, but it clearly did not knit properly all the way. It’s currently drying 12 hours later and cracking … a lot of work went into this one and I believe I can save it via vacuum sealing and, while it won’t be perfect, I hope that the flavors are right. My Q is, can I press it one last time at a far greater weight or is it to late? I’m afraid to have it become over-acidic as well. If it’s best to let it ride, so be it, but wanted to ask the experts. Had my Traeger Ironwood 650 for about 2 years now, I’ve done chickens and briskets and pork shoulders and baby backs and roasts and everything else you can think of to smoke, and through the regular trial and error i have found methods to smoke them all to great and crowd pleasing results.
So far the only thing that has repeatedly come out not to satisfaction has been beef short ribs. They always come out edible and tasting good, however those inner membranes in between layers of meat always seem to get so tough you can’t bite through it and makes for a tough time eating. I have braised them and slow cooked em in a crockpot to a good end, and have almost resolved myself to that being the direction going forward.
However i just went and picked up a whole beef from the butcher and filled the freezer and as i was tossing the short ribs in just got to thinking about not taking the L and trying to smoke them again.
Y’all got any tried and true techniques or recipes for beef short ribs?

Y'all, I think lentils might be magic for blood sugar? When I don't feel like cooking, I've been eating a can of Amy's low sodium lentil and vegetable soup, usually with a side of fruit, and I get my lowest after meal numbers when I eat this soup (88, 89). These soups are pricey, though, and I've been wanting to make a new soup recipe, so I combined a few recipes to make a sweet potato corn chowder and thought hey let's throw lentils in there, too, it seems like my blood sugar likes them.
It came out SO GOOD. I had a lil bit as a last snack of the day after I finished cooking it last night so I didn't check my blood sugar after, however I did have a good fasting number this morning.
I just ate a 320g bowl of it along with a side of cucumbers, hummus, and baby tomatoes. I walked on the treadmill for about 10 min after I ate like I usually do, and I was so shocked I took my blood sugar 3 times. I got a 66, 76, and 68 which is even lower than my normal fasting. I couldn't believe what I was seeing so I did some googling and read that "
blood glucose levels decreased between 20% and 30%," in people who ate meals that incorporated lentils into their starches.

Sweet potato, corn & lentil chowder (makes ~2020g cooked weight recipe which is ~6 servings if each serving is 350g)
Ingredients - 1 onion, any color should do (217g)
- 1 red bell pepper, deseeded and diced (170g)
- ~1T minced garlic
- 3 cups broth (I did 1 whole "Not-Chick'n Cube" plus 1/2 a low sodium veggie cube mixed in hot water)
- 1 large sweet potato, peeled and diced in about 1 in cubes (515g)
- I'm sure you could use any kind of potato, but I had a sweet potato lying around and no plans for it
- 1 jalapeño, deseeded and diced (55g)
- 5 cobs of fresh corn, chopped off the cob (575g) could definitely sub for frozen/canned
- If you use fresh corn, keep the cobs to cook in the chowder for a bit
- 1 cup dry split red lentils, washed
- 1/2 cup soy milk
- 1-2 bay leaf if you have some
- 1 t. smoked paprika
- 1/2 t. pepper
- Few shakes of chipotle powder if you have it
- Garlic/onion powder or whatever spices your little heart desires. Some cayenne if you like it spicy.
- I didn't do this, but next time I'd definitely hide some chopped kale in it to get more nutrients packed in
Instructions - In a large pot or dutch oven, sautee diced onions and red bell pepper in a splash of water for ~5 min
- Add your minced garlic and sautee for a couple more minutes
- Add 3 cups broth, diced sweet potato, diced jalepeno, corn kernels and cobs, smoked paprika, pepper, bay leaf, chipotle powder and any other seasonings you wish
- Bring to a boil and then let simmer ~ 10 minutes
- Add your washed lentils and let simmer ~ 5 more minutes
- Once potatoes and lentils are soft, fish out the corn cobs and the bay leaves
- Add 1/2 cup soy milk and mix together
- Blend lightly
- Use an immersion blender if you have it, or let your soup cool off enough to be able to put it in the blender and pulse a few times. I did it this way, but FYI you might have to blend in a couple batches.
- Top with whatever you like! Maybe cilantro or green onions? Enjoy!

So I’ve been trying to learn how to cook butter chicken but the recipe I follow doesn’t compare. It has the flavour but like after one bite the taste just disappears and becomes bland. I have no clue what I am doing wrong.
See my recipe below.
1/2 cup plain yoghurt , full fat ▢ 1 tbsp lemon juice ▢ 1 tsp tumeric powder ▢ 2 tsp garam masala ▢ 1/2 tsp chilli powder or cayenne pepper powder ▢ 1 tsp ground cumin ▢ 1 tbsp ginger, freshly grated ▢ 2 cloves garlic, crushed ▢ 1.5 lb / 750 g chicken thigh fillets, cut into bite size pieces
CURRY ▢ 2 tbsp (30 g) ghee or butter, OR 1 tbsp vegetable oil ▢ 1 cup tomato passata (aka tomato puree) ▢ 1 cup heavy / thickened cream ▢ 1 tbsp sugar ▢ 1 1/4 tsp salt
I cook it the chicken in a pan then slow cook it for 4 hours in the curry but it just falls off.
Any ideas!? Please help
